Sweet Potato Halwa is one of the favorite Indian Sweet Dish recipe , very delicious , mouth watering , healthy and very easy to prepare. Sweet Potato Halwa makes a great dessert for an Indian meal. Sweet Potato Halwa can be prepared for any festive occasion. It can be had whenever you crave for something sweet and would like it to be relatively healthier. But this halwa is mostly had during religious fasts or vrath in North India.
Sweet Potato Halwa can be made with jaggery or sugar. We have the version with jaggery here to make more healthier. It is too healthy as sweet Potato are soooo nutritious. Sweet Potato is very high in fiber and rich in Vitamin a and Vitamin C and so enhances the immunity in the body.

Preparation time – 10 minutes
Cooking time – 15 minutes
Total time – 25 minutes
Serves – 6 to 7 persons
Ingredients :-
- 2 cups sweet potato mashed
- 1 cup fresh grated coconut
- 1 1/2 to 2 cups jaggery powder
- 1 cup water
- 4 to 5 tbsp ghee
- 1 tsp cardamom powder

Method :-
Wash the sweet potato nicely and steam on medium flame for 10 to 12 minutes.
Allow the sweet potato to cool down and take off the peel on the potato.
Then grate the sweet potato through a grater and keep aside.
Heat water in a vessel and add in jaggery powder and boil nicely till the jaggery melts.
Then strain out the syrup through a strainer and filter all the dust particles.
Heat 2 tbsp of ghee in a non stick pan and add in grated sweet potato and stir nicely to roast the sweet potato.
Stir constanly till nice aroma comes and becomes slightly thick.
Then put in fresh coconut and give a nice mix once.
Then sauté the sweet for a minute and add in hot jaggery syrup and mix constantly.
When the halwa becomes thick add the remaining ghee and give nice mix.
When halwa starts to leave the sides of the kadai adding cardamom powder and mix once.
Switch off the flame and serve the hot and tasty Sweet Potato Halwa .
Garnish the Halwa with fresh coconut , cashewnuts and ghee.

Tips :-
- Do not over cook the sweet potato.
- Always steam the sweet Potato to avoid over cooking.
- You may add any nut if you wish, but this halwa tastes good even with out nuts.
- You may prepare this halwa with sugar also
- I have taken 500 gms of sweet potato approximately.
