Sweet Coconut Rice is very simple and easy rice recipe which can be prepared on festival days and offered to Goddess Devi or Shakthi as Naivedyam. This rice is a traditional sweet dish recipe that can be prepared by very easily available ingredients in any house holds.
Sweet Coconut Rice is very tasty and yummy recipe filled with freshly grated coconut and jaggery . It is very healthy and nutritious as it contains super food coconut. Consumption of any form of coconut on daily basis develops nice immunity . Coconut is rich in vitamins and contains micro nutrients and anti oxidant properties. Preparation time – 10 minutes

Serves – 4 to 5 persons
- 1 cup sona masoori rice
- 1 1/4 cup fresh grated coconut
- 1 cup jaggery powder
- 2 tsp ghee
- 2 tbsp cashewnuts
- 3 cups water
- 1/2 tsp cardamom powder
- 1/4 tsp saffron
- 1 clove
- 1 small piece cinnamon
- 1 cardamon
- Fresh coconut for garnish
- Jaggery syrup for topping
Wash the rice nicely for two to three times and soak in water for 30 minutes.
Heat ghee in a kadai and fry the cashewnuts till light golden brown and take out and keep aside.
Soak the saffron in hot water or hot milk and rest for 5 minutes .
Crush fresh grated coconut in mixer slightly using pulse mode once.
Crush the jaggery to powder using a stone or in mixer and keep it ready.
In the same kadai put in cloves , cinnamon and cardamom and give a nice mix once. Immediately add in soaked rice without water and sauté for 30 to 40 seconds.
Then add 3 cups of hot water on rice and give a good mix once.
Now put fresh coconut . jaggery powder , cardamom powder and saffron water and give a nice mix .
Transfer this to cooker and cook the rice for 2 to 3 whistles.
Allow the cooker to cool down completely , open the lid of the cooker and put in fried nuts and quarter spoon of ghee and stir nicely.
Then fill the sweet coconut rice in a greased bowl and prees nicely.
Unmould the rice on a plate , garnish with fresh coconut and drizzle jaggery syrup on the rice.
Now place tulsi leaf on the rice and offer this to the God.
- You may include fresh coconut pieces in this recipe to make more rich.
- Can add in raisins and almonds to prepare this rice.
- May replace jaggery with sugar and prepare the rice.
- If you wish you can use basmathi rice instead of sona massori rice , in that case use 2 cups of water for 1 cup of rice.
- Soak the rice after washing nicely , then strain that water and heat it use the same water for cooking to make it more healthier.
- 1 cup equals 100 ml.
