Spinach Peanut Curry

Spinach Peanut Curry is very simple and healthy weight loss recipe  which can be prepared with very less time. This curry is a combination of fiber , vitamins , fat , calcium and protein, so keeps you full for longer time and thus lowers your appetite. This Spinach Peanut can be also considered as diabetic friendly recipe as it is packed with nutrients which regulates the sugar levels in the body. Onion and garlic isn’t used in this recipe.

Peanuts being rich in variety of nutrients like Vitamin E , folate , niacin , manganese and protein . Peanuts  is a super food when it comes to their health. It also boosts the memory  so very good for growing children. Spinach has high amount of fiber and vitamin K and  rich in calcium. Spinach Peanut Curry

Ingredients :-

  • 2 1/2  to 3 cups  spinach leaves finely chopped  ( approx I medium bunch )
  • 4 tbsp  peanuts
  • 2 tbsp  Bengal gram
  • 3 to 4 green chilly
  • 2 tbsp fresh coconut
  • 1/2 tsp turmeric powder
  • 1 tsp  cumin seeds
  • 1 tsp oil
  • Few curry leaves
  • 2 tsp tamarind paste
  • 1 tsp jaggery
  • 1 tbsp gram flour (besan )
  • Salt to taste

Method :-

Soak peanuts for 2 hours in hot water or overnight.

Soak Bengal gram for one hour in water and keep aside.

Cook  peanuts and bengal gram in cooker separately with water  for 2 to 3 whistles.

Crush green chilly and coconut to coarse paste without water and keep aside.

Heat oil in a non stick kadai and put in cumin seeds and allow to splutter.

Then add in curry leaves and  turmeric powder and give a nice mix once.

Put in coarse paste  and  sauté for a minute.

Immediately put chopped spinach leaves  and sauté nicely till soft.

Now add the gram flour and sauté nicely for a minute.

Then add the cooked peanuts and bengal gram without water and give a good mix once .

Add in salt , tamarind paste  and jaggery  and stir in nicely.

At this stage add in water as per your wish and cook the curry nicely.

Do not add too much water as this curry tastes good when it is semi thick only.

Cook the curry nicely on low flame closing the lid for two to three boils.

Transfer the Spinach Peanut Curry to a bowl and garnish with a green chilly and fresh coconut.

Serve piping hot healthy Spinach Peanut Curry  with steamed rice along with ghee.

Tips :-

  • You can use fresh groundnut instead of peanuts.
  • This curry goes good even with roti or chapathi.
  • May cook the spinach leaves in cooker also.
  • Dry roast the gram flour on low flame until nice aroma  and then use it.
