Puffed Paddy Rice Kheer is very simple and one of the most easily digestible nutritious traditional Kheer or payasam or sweet dish or dessert recipe which can be served hot or chilled. It is liked by kids and elders too. This Quick sweet dish recipe is made from paddy by popping it combined with milk and rock sugar. It is called as Aralu in Kannada and kheel in Hindi. People offer this Kheer as Prasad to Maa Lakshmi in North India and to Lord Shiva or to Krishna in South India .

Preparation time – 2 minutes

Makes – 4 to 5 servings
- 3 cups puffed paddy rice
- 500 ml full fat milk
- 3 to 4 tbsp rock sugar powder ( red or kempu kallu sakare )
- 1 tbsp ghee
- 1 tbsp cashew nuts
- 1 tbsp almonds
- 1/4 tsp cardamom powder
- 2 to 3 tbsp banana pulp mashed
- Fried nuts
- Tulsi leaf and rose petals
Heat the ghee in a pan and add in chopped nuts and almonds and fry till golden brown and take out and keep aside.
In the same ghee roast the Puffed paddy rice on low flame for a minute and keep it.
Then boil the milk in a thick bottom vessel until 3 to 4 boils , then put the roasted puffed paddy rice to the milk .
Cook the milk and puffed paddy rice for 3 to 4 minutes or until puffed paddy rice becomes soft.
Then add the rock sugar powder , nuts , almonds and cardamom powder and mix well.
Then cook the kheer constantly stirring untill the kheer becomes slightly thicker.
Switch off the stove and now put in mashed banana pulp and stir in very nicely.
Garnish the Puffed Paddy Rice Kheer garnished with fried nuts, tulsi leaf and rose petals
