Lauki Chanadal Khichdi (spicy khichidi & sweet khichdi)

Lauki Chanadal Khichdi is a very  healthy and satvic Khichdi very ideal and perfect to prepare on festival days that can be offered to the God as a prasadam during this shravan month. This Khichdi  is very simple and easy to prepare with easily available vegetables  and ingredients  during this month .  From this basic Lauki Chanadal  Khichdi I have shown two different variations  which can be prepared  with in 5 to 10 minutes.

This Khichdi can be considered as very healthy  for the people who are on weight loss plan exclusively  as it filled with fiber rich Lauki or bottle  which keeps your stomach full  for longer time and helps in consuming lesser food.  This is very helpful to regulate the blood pressure levels in the body  so it is even heart friendly.

Preparation time  -10 minutes

Cooking time  –  20 minutes

Total time – 30 minutes

Serves – 3 to 4 people

Ingredients :-

Lauki  Chanadal Khichdi

  • 1 cup  lauki finely chopped ( bottle gourd or  sorakaye )
  • 3/4  cup  rice soaked for one hour
  • 1/2  cup  Bengal gram  soaked  for one hour
  • 1/4  cup fresh cow beans ( averakaye )
  • 1 tsp cumin seeds
  • 3/4  cup fresh grated coconut
  • 1/4  tsp salt
  • ½ tsp jaggery
  • 5 cups  water

Spicy Lauki Chanadal  Khichdi

  • 2 tsp oil
  • 5 to 7  green chilly slit
  • 1 tsp cumin seeds
  • 1 tsp ginger finely chopped
  • Salt to taste
  • Water as much necessary
  • 1 to 2 tbsp fried cashewnuts
  • Few curry leaves

Sweet  Lauki  Chanadal  Khichdi

  • 1 cup  prepared  Lauki  Chanadal  Khichdi
  • 1/2 to 3/4  cup  jaggery  powder
  • 1/4  cup water
  • 1/4  tsp cardamom powder
  • 1/2  tsp ghee
  • 1 tbsp  fried  cashewnuts

Method :-

Crush coconut and cumin seeds to fine paste adding little water and keep aside/

Wash the fresh tender cow beans  in the water nicely.

Heat the water in the cooker  till one boil .

Then add in rice and chanadal soaked  , lauki , cow beans , salt , jaggery  and  grinded paste  to the boiling water.

Close the lid and cook till 4 to 5 whistles.

Allow to cool down and then open the lid and take out  1 cup of khichdi  for preparing  sweet khichdi and use the remaining khichdi  for preparing  spicy khichdi.

Spicy Khichdi

Add the prepared khichdi in a  vessel and add sufficient quantity of hot water as per your wish and cook once again on low flame.

Heat  the oil or ghee in a small wok and add in cumin seeds and   allow to splutter.

Then add green chilly , ginger and curry leaves and sauté nicely for half a minute.

Pour the prepared tempering on the boiling khichdi   and salt  , then give a nice mix.

Lastly put in fried cashewnuts  and mix nicely.

Serve the piping hot spicy Lauki Chanadal Khichdi  topped with fried nuts and little tempering.

Sweet Khichdi

Heat the water and jaggery in a  small kadai , when jaggery nicely melts then add the prepared khichdi and mix nicely.

At this stage if necessary add sufficient water as per your wish and mix nicely.

When the khichdi is nicely cooked then add in ghee , fried nuts and cardamom powder and give a nice mix.  Then switch off the stove  and serve the hot Sweet Lauki Chanadal Khichdi  topped with fried cashewnuts.

Tips :-

  • You  may use grated  lauki instead of finely chopped  lauki.
  • You  may use sugar instead of jaggery  to prepare sweet khichdi.
  • You may use milk for preparing sweet khichdi  if you use sugar in sweet khichdi.
