Instant Mango Basundi

Instant  Mango Basundi   is one of the famous dessert or sweet prepared  in  Karnataka  and  Maharashtra Basundi is a delicious sweet milk recipe  and is a rich  dessert  recipe  in  India. Generally is said to be lengthy process recipe but today I have shared  a instant  mango  Basundi recipe.   I have prepared basundi  using jaggery  to make it healthier .  I have  prepared  basundi  by combining the flavor of mango.

This is a very easy and quick recipe , prepared  with out much effort  in a healthier way. So friends try this yummy and mouth watering  Instant Mango Basundi recipe  and share your feed back. I have also included another instant sweet recipe using this mango basundi .

Makes  –  5 to 6 servings

Instant Mango Basundi

Ingredients  :-

  • 500 ml   full fat milk or cows milk
  • 1 1/2 tbsp  milk powder
  • 1 1/2  tbsp  wheat flour
  • 3  to  4 tbsp jaggery powder
  • 1/2  cup  mango puree
  • 2 tbsp  fine chopped  mango pieces
  • 2 tbsp  almond flakes
  • 2 tbsp pistha flakes
  • 1 tsp ghee
  • 1/4  tsp  cardamom powder
  • Few saffron strands

Method  :-

Combine  milk powder and wheat flour  nicely  with  50 ml milk with out lumps.

Fine chop the mango into pieces  and  set aside 2 tbsp of pieces for garnish.

Heat the remaining milk  in a thick bottom non stick pan and boil once , at this stage add in saffron  strands and nuts  and give a nice mix.

Heat the milk nicely upto to 3 boils , now add in milk powder and wheat flour slurry  little  by little and  stir continuously.

Heat  on  medium to low flame  by constantly  mixing  until  it becomes slightly thick or until basundi  coats to spatula slightly.

Lastly  add in cardamom powder and  give a nice mix  , switch off the stove and allow to cool down  .

Heat  the ghee in a small kadai on low flame and put in jaggery powder  and stir in constantly  till jaggery melts nicely  and appears like a fine paste.

Then add this jaggery paste to the thicken milk and give a nice mix and transfer to a air tight box.

Store this in fridge for two hours  to cool down completely.

Now  the basic basundi  is ready now , to this add in mango puree  and stir in nicely.

Chill it in fridge for 30 minutes , then transfer  to serving bowls.

Garnish the yummy and tasty  mango  basundi  with nuts and  fine chopped  mango pieces.

Tips :-

  • You  may use 1/4  cup sugar instead of jaggery.
  • Can increase the quantity of sugar  as  per your taste ,  but  mild sugar or jaggery  will be good.
  • Combine mango puree with basundi only  before serving or 30 minutes before serving.
  • Blanch the pista and then use any type of dessert for best results.
  • Can store  the basundi in fridge for two to three days in fridge with out adding mango.
  • Can use the store bought rasagulla  to prepare  mango cheena  basundi.  ( squeeze the sugar syrup slightly and then combine with  mango basundi)

I have prepared another tasty and fantastic sweet dish by using this basic basundi

I have prepared fresh homemade mini  rasagulla  and squeezed  sugar syrup  slightly from rasagulla .

Then I have added 12 mini cheena  balls to the mango basundi  and mix once nicely.

Chill it in fridge for 30 minutes and serve garnished with  nuts.
