Green Sweet Corn Paneer

Preparation time –  10 minutes

Total time  -20 minutes

Serves –  4 to 5 people

Ingredients  ­:-

  • 3 tbsp  oil (1 tbsp+ 2 tbsp }
  • 1 tsp cumin seeds ( 1/2  tsp + 1/2  tsp  )
  • 2 to 3 green chilly
  • 1 tsp ginger
  • 2 tomato finely chopped
  • 1/4  cup paneer chopped to small dices
  • 1 cup  sweet corn (3/4 cup + 1/4  cup}
  • 1 medium onion
  • 6 garlic pods
  • 1/4  to 1/2  cup coriander leaves
  • Pinch of hing
  • 1/4 tsp turmeric powder
  • 1/4  tsp red chilly powder
  • 1/2  tsp garam masala
  • Salt  to taste
  • 1/2  tsp coriander powder

Method:-

Boil the sweet corn 1/4  cup in water adding little salt and sugar.

Crush the remaining sweet corn to coarse paste and keep aside.

Cut the paneer to small dices and sauté in oil till light golden brown.

Crush coriander leaves , onion , green chilly , garlic , ginger ,cumin seeds to fine paste.

Coarse crush the tomato slightly by just giving a whip once in mixer.

Heat 1 tbsp oil in a small kadai and roast the corn paste for 1 to 2 minutes till the moisture  reduces in the corn.

Heat the remaining oil in a non stick pan and sauté with cumin seeds.

Add the tomato paste and sauté till soft and then add the grounded green paste and sauté nicely closing the lid till oil is left from the sides on low flame.

Then add the dry masalas and salt and give a nice mix and sauté for a minute.

Add the roasted sweet corn and give a nice mix and then add sufficient water according to you wish and stir nicely.

Close the lid and cook for two minutes on low flame.

Then put the sauted paneer and give a nice mix and cook for two minutes closing the lid on low flame.

Serve the piping hot Green Sweet Corn Paneer with roti or chapathi.

Tips:-

  • You may serve this  with steamed  rice.
  • You may use potato  instead of paneer.
  • You may store this curry for two days in the fridge.
