Egg less Steamed Sweet Potato Mini Muffins

Hello , every one . Today I will make a very simple and delicious muffin recipe  with Sweet potato  with out oven , with out condensed milk , with out egg , with out baking powder just by steaming yet tastes like a normal muffin and has no taste of sweet potato. Its the best way to make kids eat sweet potato in a hidden way. If you love sweet potato, this is for you. This Egg less steamed Sweet Potato recipe is  very simple and easy.

This Lovely Eggless Steamed Potato Mini Muffins look so good and tastes very yummy too! This type of steamed muffins or cakes are known as prosperity cakes. Eggless Steamed Sweet Potato Mini Muffins are simply delicious and soft , dense and spongy in texture.

Makes  –  16 to 18 mini muffins

Eggless Steamed Sweet Potato Mini Muffins

Ingredients :-

  • 1/2  cup  or 100 gms sweet potato  mashed
  • 1 cup refined flour
  • 1/2 cup  brown sugar
  • 160 ml milk
  • 1/4  cup any refined flavorless oil
  • 1/4 tsp salt
  • more than 3/4  tsp and less than 1 tsp dry instant yeast

Garnish

  • Grated cheese
  • Chocolate  sauce
  • Colourful sprinklers

Method :-

Crush the brown sugar slightly to make like coarse powder and keep aside.

Wash the sweet potato nicely  and steam it for 10 minutes on medium flame till sweet becomes soft.

Then take out the peel of the sweet potato  and mash it nicely using masher or a fork  , when it is warm only.

Take out  1/4  cup milk  from 160 ml milk  and heat till luke warm and transfer to a cup.

Add in sugar  one tsp and dry yeast to the milk and mix once and close a lid on it and rest it for 5 minutes  to activate the yeast.

Eggless Steamed Sweet Potato Mini Muffins

In the mean time put in refined flour , sugar powder and salt in a bowl and mix nicely.

Then add in oil and soaked yeast milk and mix once.

Then add the left over milk and mix nicely with out lumps.

Lastly add in mashed sweet potato and mix nicely , seal the bowl nicely with a cling wrap or else transfer the batter to a air tight box and rest it for one hour in a hot place.

In the mean time take mini aluminum molds and grease with the oil nicely.

After one hour preheat the steamer  or cooker with sufficient water for two to three minute or till steamer becomes very hot.

Now fill the cake batter in the molds till half  and arrange the molds on the plate.

Place the plate in the steamer , if you want you can sprinkle few choco chips on each muffin.

Close the lid of the steamer and steam the muffins on medium flame  for 15 minutes.

After 15 minutes, take out the lid of the steamer and insert or put in a knife or a tooth prick inside a muffin  and check , if the tooth prick comes out easily with out any particles on it.

It means now the Sweet Potato muffins are done now, at this stage you may sprinkle grated cheese on the muffin when the muffins are still hot.

Then drizzle the chocolate sauce on the muffins and sprinkle  the colour ful sprinklers on it and serve.

You may unmold the muffins from the cups and then drizzle the chocolate sauce and sprinklers on it.

Tips :-

  • You may use steel cups instead of aluminum molds or silicon molds that are easily available in the house.
  • You may replace brown sugar with white sugar.
  • Here 1 cup means 200 ml.
  • No necessary to soak the yeast to activate if you are using dry instant yeast , in that case you may add the yeast directly to the flour with out soaking.
  • You may add in ½ tsp vanilla essence.
  • You may line with paper cups if you want.
  • This muffins tastes good for one day after you make.
