Serves – 3 to 4 people
Ingredients :-
- 250 gms bottle gourd
- 1 small potato
- 1 green chilly slit
- 1/2 tsp ginger finely chopped
- 2 1/2 tbsp roasted peanuts
- 2 cups water
- 1/4 to 1/2 cup milk
- 1 tbsp cream (opt )
- 1/4 tsp pepper powder
- 1 tbsp finely chopped coriander leaves
- Salt to taste
- 1/2 tsp lemon juice

Method :-
Take out the peel of the bottle gourd and chop into fine pieces.
Take out the peel of the potato and chop into fine pieces.
Put bottle gourd , potato, roasted peanuts , green chilly , ginger ,salt and water to the cooker and cook till 3 whistles.
Allow the cooker to cool down completely and then crush to fine paste and strain through a strainer and heat the soup again.
When the soup starts to boil add in salt and pepper powder as per your taste and heat till two boils.
Add in milk to the soup and give a nice stir, lastly add the cream and boil once and switch off the stove .
Put in lemon juice and mix nicely adding coriander leaves fine chopped.
Serve piping hot Creamy Bottle gourd Soup topped with coriander leaves.
Tips :-
- You may replace potato with one tsp of corn flour.
- You may use whey in this soup and reduce the quantity of water to make more healthier version.
- Soak the chopped bottle gourd always in water to avoid the change in the colour of bottle gourd.
