Hi friends today I will show how to make Cheesy Baked Stuffed Tomato and Capsicum recipe that can very easily prepared in the oven. Further to add , the recipe is very simple and quite easy and very delicious, flavorful with maggi masala-a-magic powder. This Cheesy Baked Stuffed Tomato and Capsicum is yummy dish that goes very well with Chapathi or roti and it can be even served as starter in parties or get together.

Preparation time – 20 minutes
Baking time – 15 minutes
Total time 30 minutes
Serves – 3 to 4 people
- 2 medium size tomato
- 2 medium size capsicum
- 1/2 cup grated fresh coconut
- 1/4 cup blanched peas
- 3 medium size potato finely chopped and boiled
- 1 onion finely chopped
- 1 tomato deseeded finely chopped
- 1 tbsp garlic finely chopped
- 2 tsp coriander leaves finely chopped
- 1/2 tsp sugar
- 2 tbsp red chilly sauce
- 1 tbsp oregano
- 1 tsp red chilly powder (opt )
- 2 tbsp oil
- 4 tbsp grated cheese
- Salt to taste
- 1 tsp maggi masala –a – magic powder
Heat oil in a pan , once the oil is hot, add the chopped onion and garlic and let them cook for a few seconds.
Add in green chilly , tomato, potato,red chilly sauce , red chilly powder ,sugar , oregano ,coriander leaves , peas and salt and mix all the ingredients well.
The filling is ready, put off the flame and add in grated coconut and mix nicely.
Let it cool down for 5 minutes. Once the stuffing cools down.
Then add in maggi masala powder and cheese to the filling and mix nicely.
Chop the tomato and capsicum into half and then deseed it to make nice cups of tomato and capsicum.
Apply oil nicely on the skin of capsicum and tomato.
Then fill the tomato and capsicum cups with the filling.
The filling should be in the level of the tomato and capsicum.
Garnish the tomato and capsicum cups with grated cheese.
Preheat the oven at 180 c. Place the stuffed tomato and stuffed capsicum on a baking tray greased with oil .
Bake stuffed Tomato for 12 to minutes or till tomato slightly becomes soft and cheese melts.
Bake Stuffed Capsicum for 15 to 18 minutes or till capsicum becomes slightly soft and cheese melts.
You may prepare this Cheesy Stuffed Tomato and Capsicum on the stove top also in this way.
Heat one tbsp oil in anon stick pan and place the stuffed tomato and capsicum cups in it.
Cover and cook for 10 to 15 minutes on low flame.
Remove the lid and sprinkle the grated cheese on each cup.
Cover again and cook on low flame foe 15 to 20 minutes.
Serve mouth watering yummy Cheesy Baked Stuffed Tomato and Capsicum with Chapathi.
- You may use any type of cheese.
- You may add in paneer pieces to the filling.
- Time for baking may vary slightly from oven to oven.
- You may add in tomato pieces deseeded in stuffed capsicum.
- You may add in finely chopped capsicum in stuffed tomato.
- you may pack stuffed capsicum and stuffed tomato as lunch box dish.
- You should apply oil on capsicum and tomato before baking.
