Banarasi Tomato Chaat

This Banaras Tomato Chaat   is a tangy Snack Recipe made from tomato , potato  along with delicious sweet tamarind ginger chutney.  Try  this innovative and different  Banarasi Tomato Chaat and I am sure you will like it.

Banarasi Tomato Chaat

Preparation time  – 20 minutes

Cooking and assembling  time  –  20 minutes

Total time  – 40 minutes

Makes  – 5 to 6 servings

roasted tomato slices , onion,pomegranate, sweet ginger chutney . grated raw mango ,  coriander leaves and tomato masala are required  to top on tikki.
Topping ingredients

Ingredients :-

Tikki

  • 5 to 6 medium potato
  • 3 tbsp  rice flour
  • 1/4  cup corn flour
  • 1 tbsp ghee
  • 2 tbsp almonds fine chopped
  • 2 tbsp cashewnuts fine chopped
  • 2 tsp poppy seeds
  • 2 tsp melon seeds
  • 2 tbsp coriander leaves finely chopped
  • Salt to taste
  • oil or ghee to shallow fry

Tomato masala

  • 3 tomato finely chopped
  • 3 tomato blanched and coarsely crushed to paste
  • 2 to3 green chilly fine chopped
  • 2 tsp coriander powder
  • 1 tsp turmeric powder
  • ½ tsp garam masala powder
  • 1 1/2  tsp cumin powder
  • 1 tsp mango powder  ( amchur powder )
  • 2 to 3 tsp red chilly powder
  • 2 tbsp oil
  • 2 tbsp coriander leaves finely chopped
  • 1 tsp  sugar
  • Salt to taste
  • Water
masala or ragda prepared using tomatoes .

Sweet tamarind ginger chutney

  • 1/4  cup tamarind soaked in hot water
  • 1/2 to 3/4  cup jaggery powder
  • 1 tsp ginger fine chopped
  • 1 tsp dry ginger powder
  • 3/4  tsp red chilly powder
  • 1/2  tsp black salt
  • 1/4  tsp garam masala powder
  • 1 tbsp raisins
  • 1 cup water

Toppings

  • 3 medium tomato cut to slices
  • Salt
  • 1/2 tsp pepper powder
  • 1/4  cup pomegranate
  • 1/4  cup  raw mango rated
  • 1/2  cup zero number sev
  • 1/4 cup  coriander leaves finely chopped
  • Chaat masala powder
onion , pomegranate , sev  and coriander leaves  are required for final topping.

Method :-

Wash the potatoes nicely for 2 to 3 times  to take out all the mud particles on the potato.

Then add sufficient water in the cooker and heat adding 1 tsp salt , put in potatoes and close the lid of the cooker and cook till 3 whistles.

Allow the cooker to cool down completely  and in the mean time  heat the ghee in a small wok and roast the almond pieces , cashewnuts  and melon seeds until light golden brown.

Lastly add the poppy seeds and mix once and switch off the stove and keep aside.

Now take out the peel of the potatoes and mash nicely , then transfer the fried nuts , salt, coriander leaves ,rice flour and corn flour on the potato mash , mix nicely to form like dough.

Apply oil on your fingers and prepare  the tikki and keep aside.

Heat the oil in a non stick pan and add in green chilly and sauté for 30 seconds and add in chopped tomato  and sauté for two minutes on medium flame  closing the lid.

Then add tomato paste and sauté nicely until tomatoes become mushy.

Add in all dry masalas and salt , give a nice mix and add in 2 tbsp water and roast the masalas nicely on low flame.

Then add in sufficient hot water to prepare the masala to pouring consistency and boil nicely.

Lastly add in one tsp sugar and coriander leaves and give a nice mix and  switch off the stove and keep aside.

Heat 2 tsp ghee in a pan and roast the tomato slices  on low flame till the moisture of the tomato disappears.

Arrange the slices in a plate and sprinkle salt and pepper powder and keep it.

Crush the soaked tamarind nicely and strain once to remove all unwanted particles.

Transfer this paste to a vessel and add in one cup of water and heat till one boil.

Then add all dry masalas except raisins and heat for five to six minutes till slightly sticky.

Switch off the stove and add raisins to the chutney and give a nice mix once , allow to cool down completely.

Heat a non stick pan or tawa with one to two spoons of oil, then place the tikki and roast the tikki on medium flame till light golden colour and keep aside.

Place two tikki in each plate and place 3 to 4 roasted tomato slices on the tikki and pour the hot tomato masala on the tikki.

Drizzle the sweet tamarind ginger chutney nicely  and then put the sev , pomegranate , raw mango grated and raisins.

Lastly  sprinkle chaatmasala  powder , salt and red chilly powder  .

Sprinkle fresh coriander leaves and serve hot Banarasi Tomato  Chaat.

Tips :-

  • You can use fine chopped onion as a topping.
  • Can replace corn flour with arrowroot powder.
  • Heat the tomato masala nicely  at the time of serving.
  • Tamarind ginger chutney should be diluted if necessary to get the pouring consistency.
  • Raw mango is totally optional.
  • Can use half cup of sugar instead of jaggery.
  • can avoid the onion in this recipe .
